Dry aged beef: what dry aging does and how long it takes
By the Amarone Italian Food & Steak team, a steakhouse in Zielona Góra since 2007

What dry aging is
Dry aging is ageing beef without any packaging, in a dedicated cabinet or room. The meat rests on racks or hangs while cold air circulates around it all the time. This is how the best steakhouses in the world age their beef, and how we do it at Amarone in our own ageing cabinet.
Large cuts are aged, usually on the bone: the strip loin (which becomes the New York Strip), the rib (ribeye) or a whole rib section from which the tomahawk is cut. A single steak cannot be aged well, because it would dry out too much.
What happens to the meat
Two processes run at the same time.
- Tenderising. Natural enzymes in the meat slowly break down the proteins of the muscle fibres. The meat becomes far more tender than fresh beef.
- Concentrating flavour. The meat loses water, so the beef flavour gets stronger. Over time nutty, buttery and sometimes slightly cheesy notes appear, often compared to aged Parmesan.
A dark, hard crust forms on the surface. It protects the inside of the cut and is trimmed off before portioning.
Conditions in the cabinet
| Parameter | Typical value |
|---|---|
| Temperature | 0–4°C, most often 1–3°C (34–37°F) |
| Relative humidity | 75–85% |
| Airflow | 0.2–2.5 m/s, constant and even |
| Time | usually 14–35 days; steakhouses typically 21–45 days |
| Weight loss | up to 30% including the trimmed crust |
Polish food scientists give the same ranges: Domaradzki, Florek and Litwińczuk described them in a 2019 review of dry-ageing technology in the journal Food. Science. Technology. Quality. A team from SGGW and the University of Warsaw is working on starter cultures to shorten ageing, because today it is slow and the meat can lose up to 30% of its weight.
Many cabinets have walls of Himalayan salt blocks that help keep humidity stable, and UV lamps that limit bacteria. Control matters: every cut carries its start date and weight.

This is how it looks in our kitchen. On each tag the chef writes the cut, the date it went into the cabinet and its weight, and our system tracks which cut is ready to come out.
How many days
- 21–28 days: clearly more tender, still a classic beef flavour. A good start if you are trying dry aged for the first time.
- 30–45 days: full, nutty flavour and a very tender bite. This is how we age most of our ribeyes and New York Strips.
- Beyond 60 days: an intense flavour for connoisseurs. At Amarone you can choose VIP aging for up to 360 days: select your cut and aging time in the steQr configurator.
Dry vs wet aging
Wet aging means ageing vacuum-packed meat. It also becomes tender but keeps its water, so the taste is milder and more “metallic”, with almost no weight loss. Dry aging costs weight and trimming but gives a flavour you cannot get in plastic, which is why dry-aged steaks cost more.
How to order it
Dry-aged beef is at its best medium rare or medium: a warm pink centre, melted fat and the fullest flavour. More in our article on steak doneness.
The cuts in our cabinet change every week. The current list with weight, ageing time and price, plus a description and a short film for every steak, is in our steak menu on steqr.pl, and more about our steaks is on the page Dry-aged steaks in Zielona Góra.

Full steak menuQuestions and answers
How many days is dry aged steak aged?
Usually 21 to 45 days. After about three weeks the meat is noticeably more tender; after four to six weeks the flavour becomes deeper and nuttier. Longer ageing, up to 100 days and beyond, is a taste for connoisseurs.
Is the mould on dry aged beef safe?
The dried outer crust is trimmed off before the steaks are cut. Only the clean meat from the inside reaches the kitchen, which is why large bone-in cuts are aged rather than individual steaks.
Why is dry aged steak more expensive?
The meat loses water in the cabinet and the dry crust must be trimmed after ageing, so much less steak is left than at the start. Add weeks in the cabinet and constant control of conditions.
